Fast food is delicious and irresistible, that’s for sure a statement I agree with. However is going out and spending this amount of money often responsible when we have cheaper, healthier and more tasty alternatives. 

Once in a while a bowl of Chipotle isn’t bad but if you’re obsessed like I am you’re going to be real excited for this one!

So here it is, the recipe for one of these delicious bowls. And for those who prefer their burritos just add a fajita and you’re set in stone!

Make the Cilantro-Lime Rice

  • Ingredients: 1 cup long-grain white rice, 2 cups water, salt, 1 tablespoon lime juice, 1 tablespoon chopped cilantro.
  • Instructions:
    1. Rinse rice under cold water.
    2. Bring water to a boil, add rice and a pinch of salt, reduce heat, and simmer for 15-18 minutes (or cook according to package).
    3. Fluff the rice, mix in lime juice and chopped cilantro.

Step 2: Prepare the Protein

  • Chicken: Marinate 1 lb. of diced chicken breast in 1 tablespoon adobo sauce, 1 teaspoon cumin, and a pinch of garlic powder for 30 minutes, then grill or pan-sear until cooked through.
  • Steak: Marinate steak with lime juice, olive oil, garlic, cumin, and chili powder, then grill or pan-sear. Slice thinly.
  • Sofritas (Tofu): Crumble tofu and sauté with chipotle peppers, adobo sauce, and spices (paprika, cumin, garlic powder) until slightly browned.

Step 3: Prepare the Beans

  • Ingredients: 1 can black or pinto beans, drained, with 1 bay leaf, 1/2 teaspoon cumin, and a pinch of salt.
  • Instructions: In a small saucepan, combine beans, spices, and a splash of water. Simmer on low heat for 5-10 minutes until heated through.

Step 4: Cook Fajita Veggies

  • Ingredients: 1 bell pepper (any color), 1/2 large onion, sliced.
  • Instructions: Sauté peppers and onions in olive oil on medium-high heat until slightly charred, about 5-7 minutes. Season lightly with salt.

Step 5: Prepare Salsas and Toppings

  • Tomato Salsa (Pico de Gallo): Combine diced tomatoes, onions, cilantro, jalapeño, lime juice, and salt.
  • Corn Salsa: Mix corn (frozen or fresh), diced red onion, jalapeño, cilantro, and lime juice.
  • Guacamole: Mash 1-2 ripe avocados with lime juice, salt, red onion, and jalapeño.
  • Additional Toppings: Shredded cheese, sour cream, and shredded lettuce.

Step 6: Assemble the Bowl

  1. Start with a base layer of cilantro-lime rice.
  2. Add beans and your choice of protein.
  3. Top with fajita veggies, salsas, and additional toppings like cheese, guacamole, and sour cream.
 
And boom you have the most delicious order of Chipotle without having to leave your house!

Ingredients:

  • For the Dough:

    • 2 cups all-purpose flour
    • 1 tsp salt
    • 1 tbsp sugar
    • 1 tbsp dry yeast
    • 1 cup warm water
    • 2 tbsp olive oil (for the dough) + extra oil for greasing the pan
  • For the Toppings:

    • Mozzarella cheese (or a cheese blend)
    • Your choice of pizza toppings (pepperoni, bell peppers, mushrooms, etc.)
    • Pizza sauce

Step 1: Prepare the Dough

  1. In a mixing bowl, dissolve the sugar and yeast in warm water. Let it sit for 5-10 minutes until frothy.
  2. Add flour and salt to the yeast mixture and mix until a dough forms.
  3. Knead the dough for about 5 minutes until smooth. Cover and let it rise for 1-2 hours, or until doubled in size.

Step 2: Prepare the Pan

  1. Preheat your oven to 475°F (245°C).
  2. Generously coat a deep, round cake or cast iron pan with about 2-3 tablespoons of olive oil. This will help create the crispy edges.

Step 3: Shape and Proof the Dough in the Pan

  1. Once the dough has risen, gently punch it down and press it into the greased pan, pushing it out to the edges.
  2. Cover the pan loosely and let the dough rise for another 20-30 minutes.

Step 4: Add Sauce and Toppings

  1. Spread a thin layer of pizza sauce over the dough.
  2. Add a generous layer of shredded mozzarella, then add your favorite toppings.

Step 5: Bake

  1. Bake the pizza for 15-20 minutes, or until the crust is golden and crispy and the cheese is bubbly.
  2. Let the pizza cool slightly before slicing and serving.

 

 

 

Ingredients (Makes 4 Burgers)

  • For the Patties:
    • 1 lb ground beef (preferably 80% lean for juiciness)
    • Salt and pepper, to taste
  • For the Toppings:
    • 4 slices American cheese (optional but recommended)
    • Leaf lettuce
    • Sliced tomatoes
    • Thinly sliced onions
    • Pickle slices
  • For Assembly:
    • 4 burger buns, preferably brioche or potato buns
    • Butter or oil for toasting buns
    • Condiments (ketchup, mustard, mayonnaise)

Step-by-Step Instructions

  1. Prepare the Patties:

    • Divide the ground beef into 4 equal portions, and gently shape each into a round patty about ½-inch thick. Avoid over-handling the meat to keep the patties tender.
    • Season each patty with salt and pepper on both sides.
  2. Cook the Patties:

    • Heat a cast-iron skillet or grill pan over medium-high heat. If using a skillet, add a little oil to prevent sticking.
    • Place the patties on the skillet or grill, and cook for 3-4 minutes on each side for medium doneness. Add a slice of cheese on top during the last minute to melt.
  3. Toast the Buns:

    • While the patties cook, lightly butter the inside of each bun. Place them cut side down in a separate skillet or on the grill until golden brown.
  4. Assemble the Burgers:

    • Spread condiments (ketchup, mustard, mayo) on the top and bottom buns.
    • Layer the bottom bun with lettuce, a slice of tomato, and the cooked patty with melted cheese.
    • Add onions and pickles if desired, then place the top bun on to finish.
  5. Serve:

    • Serve the burgers hot with classic sides like fries, onion rings, or a simple salad.
